Yerba mate is widely known as the source of the beverage called mate, traditionally consumed in central and southern regions of South America. The leaves called yerba (Spanish) or erva (Portuguese), both of which mean "herb" are evergreen, wide, with a serrated margin and contain caffeine. Yerba mate contains polyphenols such as flavonoids, quercetin, rutin and phenolic acids, which in turn play a role in fat metabolism. Effects on weight loss may be due to reduced absorption of dietary fats and/or altered cholesterol metabolism. Yerba mate also contains elements such as potassium, magnesium, and manganese. Yerba mate can also be found in various energy drinks on the market today.
The flavor of brewed mate resembles an infusion of vegetables, herbs, grass and is reminiscent of some varieties of green tea. The infusion is prepared by filling a container with dry leaves (and twigs) of the mate plant, and filling it up with water at a temperature of 70–80 °C (158–176 °F), hot but not boiling. If steeped in boiling water it is generally bitter. Sugar may or may not be added; and the mate may be prepared with cold water.
